– 200g ham, thinly sliced
– 2 eggs
– 1 ½ cup shredded cheese (Mozzarella, Cheddar, or Gruyere)
– 1 cup milk
– ½ cup sour cream or cream cheese
– Butter, melted for sauté pan
– ½ cup of cold water

Instructions :
We can start the preparations for the crepes by a lacing the sautué pan with melted butter and using it to whisk all the ingredients until we achieve desired uniform texture. While pouring heated milk + water we start to add and melt the butter on a separate bucket at the same time. After both melted butter and hot liquid ingredients reach room temperature, only then add them to the previously whisked flour.
Notes:
The crepes can be served with a slight ‘Dol sette’ of freshly ground tomato, ketchup or any broth!
Cook for about 1-2 minutes until edges pull away, then flip and cook for another 30 seconds.
Do this until there is no batter remaining.
2. Assemble the Crepes
Preheat the oven to 180°c. (350Degrees Fahrenheit)
Take a crepe and spread either sour cream or cream cheese in a thin layer.
Layer some ham slices and top with sprinkle of shredded cheese.
Add some freshly ground black pepper, and if you like, a small amount of mustard.
Tightly roll the crepes and place in a greased baking dish.
3. Bake to Perfection
Pour melted butter over the top of the crepes.
Add some Parmesan cheese and herbs or paprika.
