Ingredients:

For the batter:

2 cups (250g) all-purpose flour 1 tbsp baking powder ½ teaspoon salt 3 large eggs 1 cup (240ml) milk ¼ cup (60ml) olive oil 1 cup (100g) grated cheese (add cheddar or preferred cheese)

To fill:

1 cup (150g) diced sausage 1 cup (120g) diced carrots ½ cup (80g) chopped bell peppers (various colors) ½ cup (60g) corn kernels ¼ cup (30g) finely chopped spring onions 1 teaspoon garlic powder 1 teaspoon mixed herbs (optional)

 

 

Instructions:

  1. Prep the oven: Start by setting the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease the loaf pan or line it with parchment paper.
  2. Mix dry ingredients: Combine the flour, baking powder and salt in a large bowl.
  3. Mix wet ingredients: Take a different bowl and whisk the eggs, milk, and olive oil.
  4. Combine: Slowly add the wet mixture to the dry ingredients while stirring until just combined.

Pour and Cook: Pour the mixture into the standardized loaf pan, smoothing the top with a spatula. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Cool and serve: Let the loaf cool slightly before slicing it. Serve when it’s warm, or at room temperature.
