Tapioca is one kind of pudding which can be made at home – Among all desserts, tapioca pudding can be considered the most disputed. Some people adore it while others hate even its sight. Maybe because I used to take cooked in my childhood, but personally I belong to those who are fond of this dish. It is a traditional sweet meal that is smooth and delicious. The very first spoon always brings me back to those happy times when I was young.
Though not so many individuals cook it today as they did before, in my opinion only traditional should be prepared. Manufactured doesn’t come near homemade in terms of creaminess or taste; it’s just far from being good enough. Fortunately, making this dessert yourself is not difficult at all!
Ingredients
½ cup small pearl tapioca
4 cups milk, whole or 2%
¾ cup white sugar
3 eggs
¾ cup white sugar, additional
1 teaspoon vanilla
How to create a homemade Tapioca pudding?
Rinse tiny beads of tapioca and put them into a small dish. After that, cover them with water and let them rest for 45 – 60 minutes.
Pour milk into a saucepan together with the first portion of sugar (3/4 cups). Set it on medium heat until it starts simmering. Once you see bubbles appearing on the surface, put in soaked pearls and lower down the heat to keep it gently simmering. Stir frequently; cook for another 15-20 minutes until transparent.
While beads are being prepared blend remaining amount of sugar with eggs using medium-sized bowl.
Use a ladle or any other suitable utensil to take about 1/3 cup hot liquid at once from saucepan where tapioca is cooking currently and pour it slowly in thin stream into egg-sugar mixture stirring all time. Keep adding this way about half of hot mass to eggs while stirring constantly.
Afterwards empty everything back into that saucepan stirring without pause.
Cook more for around 3-5 minutes until thickens slightly (besides it will thicken further during chilling).
Remove from burner then stir vanilla extract through. Portion out into serving dishes; refrigerate till needed.
