Creamy Potatoes and Peas !!

This comforting, savory and creamy potatoes and peas dish makes a great accompaniment to various main courses. It is made up of soft, tender potatoes and sweet peas that are engulfed by a heavy sauce.

4 cups diced potatoes

1 cup fresh or frozen peas

2 tablespoons butter

2 tablespoons all-purpose flour

1 ½ cups milk

Salt and pepper to taste

1 tablespoon chopped fresh parsley (optional, for garnish)

Cook the Potatoes: Boil the diced potatoes in a big pot until they get tender for about ten to twelve minutes then drain them off so as to be put aside.

Prepare the Peas: If it happens that you are using fresh ones you can add them into the boiling potatoes for the last three minutes of cooking. In case you are using frozen pea just allow them to thaw while potatoes are on fire.

Make the Cream Sauce:

Firstly, heat up some butter in a big frying pan.

Then mix the flour with a whisk and cook for one minute; until it starts to bubble and look smooth.

Gradually add the milk, whisking constantly to avoid lumps.

Keep on cooking as well as mixing until it becomes thick with approximately five to seven minutes of whisking.

Combine and Season:

The cooked potatoes plus peas should be added into this skillet.

They have been stirred gently thus ensuring they are coated using cream sauce.

Salt and pepper according to your taste buds.

Transfer these creamy potatoes together with peas into some bowl meant for serving purposes only when necessary,

or top with chopped fresh parsley.

Hints for Success

Equal size cutting: Make sure that the potatoes are cut into pieces of even sizes in order to ensure equal cooking all round.

Uniform sauce: When the gravy is very viscous, then a little more milk will help. However, if it is too runny, allow it to boil for longer and it will thicken.

Fresh Herbs: Fresh parsley adds both color and taste but you could also consider using other choices such as dill or chives.

Health Benefits

Potatoes: Potatoes are an excellent source of vitamins C and B6, potassium and fiber that make them a nutritious vegetable which can be cooked in many different ways.

Peas: This dish has been enriched with peas as they have high amounts of vitamins A, C and K together with protein and fiber.

Milk: Added calcium, vitamin D and protein makes the sauce creamy as well as nutritional value for its consumers.
