2 cups crushed nuts (e.g. almonds, peanuts, hazelnuts)


1 cup puffed rice cereal

1 cup peanut butter with no oil separation

Half or ½ cup of honey

2 cups milk chocolate chips

Two tablespoons extra virgin coconut oil

One teaspoon vanilla extract

Cupcake liners made from paper



Make Filling:

Combine crushed nuts, puffed rice cereal, natural peanut butter, honey and vanilla in large mixing bowl.

Take tablespoon-sized portions of the mixture and mold them into oval or circular shapes. Place them on a parchment-lined baking sheet.

Refrigerate the shaped mixture for around thirty minutes until it is firm.

In a microwave-safe dish combine the milk chocolate chips and coconut oil. Heat in 30 second increments stirring after each one until chocolate runs smooth when melted.

Dip each chilled filling piece into the melted chocolate fully coating it then allow excess chocolate to drain onto parchment paper before returning to it there again.

Repeat with all pieces and put in the fridge until set, about 15-20 minutes.
