Okay So Cod Gets a Bad Rap
And honestly? It’s not entirely undeserved
Look, I get it. Most people’s experience with cod is either a soggy fish sandwich from somewhere forgettable, or that one time they tried cooking it at home and it came out weirdly rubbery. Been there. But hear me out — blackened cod in an air fryer is a completely different situation, and it’s converted me into a full-on cod person.
“Blackened” just means you press a ton of spice into the fish and blast it with high heat until the outside gets dark and a little crispy. That’s it. It sounds fancy, it looks fancy, it takes like 20 minutes. Your air fryer does most of the heavy lifting and you get to take all the credit.
What You’re Gonna Need
Nothing weird, I promise — just spices you probably already have
For the fish:
2 to 4 thick cod loins — go thick, thin ones dry out too fast
Olive oil, avocado oil, or melted butter if you’re feeling indulgent
The spice rub: smoked paprika, garlic powder, onion powder, oregano, cayenne, salt, black pepper
For the dipping sauce — and please don’t skip this:
Mayo, dijon mustard, fresh dill, capers or minced pickles, lemon juice, tiny bit of lemon zest
The sauce is basically a fancy tartar and it’s so good against the spicy fish. You’ll want to put it on everything after this.
How to Actually Make It
Dry the fish. Seriously. I’m not joking around here.
Pat your cod dry like it owes you money. Multiple paper towels, press firmly, go to town. Wet fish steams in the air fryer instead of crisping up, and you’ll end up with something pale and disappointing instead of that gorgeous dark crust. Don’t let that happen to you.
Once it’s dry, brush it all over with your oil or butter. Mix your spices together and press — actually press — the rub into the fish on all sides. Don’t just dust it on and call it a day.
Preheat your air fryer to 400°F, pop the fillets in without letting them touch, and cook for 8 to 11 minutes depending on how thick they are. While that’s going, whisk your sauce together. Takes three minutes, makes everything taste better. Finish with a little parsley and lemon zest on top if you want people to think you really cooked cooked.
Two Tips That Will Save Your Dinner
Genuinely, just these two things
Don’t flip it. Cod falls apart if you try to turn it — and then you’ve got blackened cod rubble, which tastes okay but feels like a loss. The air fryer circulates heat underneath anyway so you don’t need to touch it. Just leave it alone and trust the process.
Check it at 8 minutes, not 11. This fish has maybe a one-minute window between perfect and rubbery, and once it’s overdone there’s no saving it. Thinner pieces are done at 8, thicker ones might go to 11 — poke it with a fork and if it flakes easily, you’re done. Do not wait for a timer to tell you what your fork already knows.
Is It Actually Good for You Though?
Surprisingly yes, which is a nice bonus
Cod is genuinely solid nutritionally — lots of lean protein, low fat, good B12. The air fryer keeps it lighter than pan-frying in a butter pool. The spices add all that flavor without really adding calories, and cayenne gives your metabolism a little nudge. It’s one of those meals that feels like a treat but isn’t secretly terrible for you. Love when that happens.
Quick Questions You Might Have
Frozen cod okay? Yeah, just thaw it fully and then dry it extra well — frozen fish holds way more water.
How spicy are we talking? Medium-ish with the standard amount of cayenne. Totally adjustable though — go light or go wild, up to you.
No air fryer? Cast iron pan on high heat works great. Just crack a window first because your kitchen will fill with smoke and your smoke detector will have opinions about it.
What do I serve it with? Rice, slaw, roasted veggies, or honestly just the sauce and some lemon. It goes with basically everything.
First time I made this I hovered over the air fryer the entire time like a nervous parent. Now I just set it, make the sauce, and it comes out right every single time. Give it one shot and I genuinely think it’ll become a regular in your rotation.
